Ingredients

Scale

1.52 lbs boneless chicken breasts or thighs
2 cups low-sodium chicken broth
1 tsp minced garlic
1 tsp Italian seasoning
Salt and pepper, to taste
1 (8 oz) block cream cheese, cubed
1 (15 oz) jar Alfredo sauce
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 (20 oz) package refrigerated cheese tortellini
Fresh parsley, for garnish (optional)

Instructions

  • Add chicken, broth, garlic, seasoning, salt & pepper to crockpot.

  • Cook on LOW 3–4 hrs or HIGH 2–2.5 hrs until chicken is cooked.

  • Shred chicken in pot. Add cream cheese, Alfredo, mozzarella, Parmesan. Stir.

  • Cover and cook on LOW 20–30 mins, stirring occasionally until creamy.

  • Stir in tortellini. Cook another 20–30 mins until pasta is tender.

  • Garnish with parsley and serve hot.

Notes

Use fresh tortellini, not frozen. Stir occasionally for even melting. Add spinach or mushrooms for variation.
